The Big Spruce is proudly owned and expertly helmed by Executive Chef Christian Kruse. A native of Westford, Vermont, Chef Kruse brings an impressive culinary background, highlighted by his graduation from NECI and his tenure as Executive Chef at Basin Harbor Club. He also previously owned Vergennes Laundry, a wood-fired bakery and restaurant celebrated for its exceptional brunch and dinner menus crafted with premium local ingredients.

Chef Christian Kruse's culinary prowess has garnered numerous accolades throughout his career. In 2016, he was honored as Vermont Chef of the Year by the Vermont Chamber of Commerce and received an exclusive invitation to present his culinary artistry at the prestigious James Beard House in New York City. Beyond his professional achievements, Chef Christian is deeply committed to charitable endeavors, previously serving as a member chef for the March of Dimes Vermont and the Cancer Patient Research Foundation. He also dedicated six years as a judge and instructor for the Vermont JR Iron Chef competition, fostering the next generation of culinary talent.

Further solidifying his reputation, Chef Christian was the proud owner of Vergennes Laundry By CK, which earned him significant recognition. His contributions to the culinary world have been widely acknowledged, including his distinction as a James Beard Semifinalist for Best Chef: Northeast in 2022 and winning the 7 Daisies Best New Restaurant award in the same year. His culinary expertise has been featured in prominent publications such as Best of Burlington Magazine, Edible Vermont, and Brew View Vermont in both 2021 and 2002.
